Caramelized brussels sprouts, roasted (locally grown) acorn squash, baked carrots, and red potatoes with herbs and a little garlic. A little sweet, savory, and mildly garlicky. A great side for the seitan. 

3-4 serving tray.

Warm at 350, covered, 20-25 minutes. 

Nut free. Gluten free.
